Station House Tandoori Mix

Here’s the standard ‘Station House Tandoori Mix’ we use at Station House which you can see me making in the video. It’s important not to add the turmeric, nutmeg and garam masala at the roasting stage. Powders can burn!

25g Coriander Seeds

25g Station House Garam Masala (See separate recipe and video)

A teaspoon Black Pepper Corns

5 Cloves

A good grate of nutmeg

2 teaspoons of turmeric

Toast the coriander seeds, black pepper corns and cloves in a dry frying pan (no oil) but don’t burn them!

Transfer the spices to a pestle and mortar / grinder, add your tumeric, garam masala and nutmeg and grind to as fine a powder as you can.  Store in an air tight container.  Much better to make up fresh every time if you can as the powder will lose potency once ground.
